Salad

Sauté onion slices until caramelized. Combine choice of salad greens with chicken*, onion, and whatever salad toppings you like such as tomatoes, carrots, and bell pepper.  Add cheese if you want (feta, goat, parmesan, or shredded cheddar all work) and salad dressing**.

*Although this version features Mrs Moore’s Chicken, there are other proteins that work equally as well, such as grilled steak, pork tenderloin or salmon.

**Easy salad dressing: 2:1 ratio of olive oil to vinegar. Add teaspoon of oregano, thyme, rosemary, or tarragon. Add salt and pepper, a teaspoon of Dijon mustard, and juice from half of a lemon. Combine in Tupperware and shake until blended.
