Sauté mushrooms or roast cherry tomatoes while boiling pasta; combine chicken*, mushrooms (or tomatoes), and goat cheese with pasta. For the picky eater, you can serve the pasta plain with olive oil and parmesan cheese separate from the chicken and serve with sliced peppers or carrots or apple sauce.
*Although this version features Mrs Moore’s Chicken, there are other proteins that work equally as well, such as grilled steak, pork tenderloin or salmon.
