Carrots

Sauté onion, chili peppers, and red peppers. Add salt, pepper, cumin, cayenne, and coriander. Add 1 can of black beans and shredded chicken*. Add 4 cups of chicken broth. Simmer until warmed through. Serve with shredded cheese, sour cream, avocado slices, salsa, and hot sauce. 

*Although this version features Mrs Moore’s Chicken, there are other proteins that work equally as well, such as grilled steak, pork tenderloin or salmon.
